8GRI last week were investigating transpiration in plants - essentially the process whereby plants continue to lose water from their leaves in order for them to suck the water from the soil against gravity ! They were particularly looking at Xylem and Phloem in plants which are the structures responsible for this process. Notice the dark coloured thin lines in the celery - these are the xylem vessels through which the water is travelling.
